fast fajitas for four

There are really good fajita kits in most superstores so go and grab yourself one along with some colourful veg and get making fast fajitas.




Rolled and ready to eat

A fajita kit will feed 4 people, it usually has around 8 fajitas. It's a good meal to have friends round for.

What you will need:
frying pan
tin foil
chopping board
sharp knife
fajita kit
1 red/green pepper (green are a little more bitter but still lovely, I prefer red)
1 small red onion
2 chicken breasts (Halloumi can be fried up and used instead of meat)
1 small carrot
1/2 cucumber (yes they come in half sizes)
small lettuce
4 spring onions
5 or so radishes 
5 cherry tomatoes or 2 large
avocado (if you're feeling like pushing the boat out)
sour cream or natural yogurt

Basically, use what you fancy in this meal - not rules, anything goes.

Pre-heat oven to 200 degrees centigrade

Method
chop the veg



Slice the chicken as thinly as you can, it'll go much further and thin pieces fry very, very quickly saving time at the cooker. There will be a spicy powder mix in the kit so throw this all over the chicken and mix.

Both are now ready for frying. Put out the salsa, sour cream etc on the table ready to dip into and cut up anything that is going into the salad, lettuce, avocado and toms etc plus anything left that you are not frying.

Wrap the tortillas from the kit in tin foil and put into the oven for 10 minutes.

6 minutes before the tortillas are ready fry the chicken for about 3 minutes on a high heat, turning to cook through. Add the veg and fry for another 2-3 minutes.



Both tortillas and mixture are ready for serving up. Plate up the tortillas and mixture on separate plates and let your friends help themselves to as much or as little as they fancy.

When you cook this once you'll realise that anything can go into these fajitas.
