The easiest and quickest soup I have ever made!
Healthy, tasty, cheap and quick, all the things I like about food.
Oh and if you are watching your waistline don't add the cheese topping! Very low fat without the cheese.

It was as easy as chucking this...
(600ml of stock, 2 garlic cloves, 1onion, 2 carrots and 1 red chilli)
and this....
(x2 390g cartons)
with this
(150g red lentils)
and about 1/2 teaspoon of ground coriander.
into this...
bring to the boil, simmer for 15 minutes and blitz in a food processor or with a hand blender.
Pour into a bowl, add lots of your favourite cheese and serve with lovely crunchy bread.
The next time I make this I will replace this photo with one where you can really see the soup. I was in a rush to eat it as I was starved and forgot to take a photo pre-chucking on the cheese.
The chilli gives it a great tingle at the back of the tongue, it's packed with taste and healthy ingredients.
Also nice is crusty bread toasted with cheese melted over the top or garlic bread!
This will freeze easily so if making for one divide the rest into 3 freezer bags and you have lunches and dinner for the next few days lined up and ready.
