A friend said she never manages to cook her rice right, it's either gloopy or undercooked but it's pretty easy if you have a lid on your saucepan.
This meal serves 2
Curry, rice and naan bread
What you'll need to cook this meal
Saucepan with lid
frying pan
grill for naan bread
Ingredients
Ready cooked naan bread (will simply need heating in the grill)
1 red onion - chopped
1/2 bag of fresh spinach
2 large tomatoes - chopped
2 tablespoon Pataks balti curry paste (a 283g jar will make at least 6 or more meals)
hot water from kettle
1/2 cup of easy cook rice per person ( more if you want to have leftovers for lunch tomorrow)
a small piece of rump steak cut up into chunks (mine cost £3.00 and I used some of this meal for lunch next day)
If making veggie version use 4 quorn burgers broken into quarters.
Method
Put rice in a saucepan and wash (this gets rid of the starch and it won't go gloopy). Add boiling water to the rice filling the pan 3/4 full to well cover the rice. Bring to the boil, put the lid on, turn to lowest heat and leave for 10 minutes. DO NOT TAKE LID OFF FOR 10 MINUTES.
Immediately get your frying pan going with a glug of olive oil, when hot turn heat down a little and add the chunks of steak and brown them, stir around to brown all sides then add your onion and tomatoes. Fry for 2 minutes then add the Pataks curry paste and stir well. Add as much hot water from the kettle as you want to make a sauce, less makes it thicker, more thinner. Have a quick taste - do you want to add more paste or does it taste good?
meat, onion and toms
Throw your fresh spinach on top and gently stir into the sauce. Leave the sauce bubbling gently until your rice is done.
patak paste, water added and spinach thrown in
2 minutes before the rice is cooked put your naan bread under a hot grill and turn once.
After 10 minutes it's time to serve up and eat.
You could have some ready made poppadoms on the side and perhaps some natural yoghurt if you want to calm the curry down a little.
If you have leftovers put them into a food container, into the fridge and eat for lunch tomorrow. The taste will continue to improve overnight and you'll love it even more!
Enjoy
