A quick snack with a fresh dip or can be tasty side dish.
For 1 person
Quarter length ways a handful of new potatoes, pour a little olive oil over them and rub so that they are covered but not dripping. Spread them over a foil covered baking tray.
Add a good sprinkle of paprika, a good pinch of salt, 4 garlic gloves crushed in their skins and as much dried or fresh chilli as you can take.
Bake in a preheated oven at 200 degrees centigrade for 40 minutes.
After 40 minutes take them out of the oven and chop 4 rashes of pancetta or thin bacon over them and put back into the oven for a further 10 minutes. You can add some grated cheese at this stage, cheddar, leerdammer, whichever you fancy. I'm cooking my wedges to take into work tomorrow so I'm going to store them in the fridge overnight, put grated cheese on them at lunchtime and grill them for 5 minutes to let the cheese melt.
The wedges are lovely hot and dipped into sour cream, hummus or pretty much any dip you like. I made a tapenade earlier with roasted red peppers, sun dried tomatoes, garlic,chilli, salt and pepper all whizzed up in the food processor with olive oil. The olive oil was drained through a sieve and the remaining tapenade has made a gorgeous dip.
They go really well with a fresh green salad, a piece of salmon and a nice cold drink.
