pancakes, strawbs and maple syrup

the simplest and quickest of recipes for pancakes

110g/4oz plain flour (make sure you sift it first)
2 eggs
small pinch of salt 200ml/10fl oz of milk
2oz melted butter

For filling - strawberries, maple syrup or lemon and sugar or anything you fancy

Ingredients
Using a sieve sift the flour into a bowl, the higher the better as it makes it lighter.
Make a well in the flour and crack into it the 2 eggs, whisk all the flour into the eggs.
The flour will stick in the middle of your whisk but comes out later.
Add the pinch of salt.
Add the milk bit by bit and whisk well to get rid of all the lumps (they do eventually come out).



Melt all the butter gently in a frying pan and then pour it into a cup. A little of this will be used each time you make a pancake.

So, it's as easy as this.

Heat the pan quite high.
Add about a quarter of a cup of the mixture and swizzle it around the pan, not too much or the edges will burn as they will be too thin.
You will see the mixture darken and the centre goes last - time to flip it over. use a fish slice to flip or if you're feeling brave (or have no fish slice) flip it into the air and catch in the pan.


A minute on this side and job done.
Remove the pan, add a little of the melted butter and return to heat. Heat can go down a little now.
Fill pancakes with anything you fancy, savoury or sweet.
