Thai lettuce beds


An improvised version of a meal I recently had at a Chinese restaurant. Very tasty, very healthy, very quick!
It's all about dicing, constructing and trying not to make a right mess of yourself as you dive into these delicate lettuce beds.

Ingredients for 2 people.

Half a red pepper,diced
Half a yellow pepper, diced
Half a carrot diced
Half a small cucumber, diced
Roughly 360g lean pork Loins
1 lettuce of your choice. Little gems or iceberg are perfect'
2-3 cups of rice
5 tablespoons soy sauce
3 tablespoons hoisin sauce
Splash of olive oil for frying

Plus, A small bowl of hoisin and soy sauce mixed together to your taste, ready for dribbling over your lettuce beds. 

Chop all the ingredients including the pork. 



Add hoisin and soy sauce to the pork and keep in the fridge until needed.

Boil the rice. I've found the rice is perfect if washed first in cold water, covered with boiling water,  lid on and brought to boil. Turn the heat right down low for 10 mins and keep the lid on.
A few minutes before the rice is ready heat a frying pan and add the diced carrot, peppers and pork. Fry for 4-5 minutes. 

Drain the rice and add to a bowl. Put all the separate components, fried ingredients, cucumber and extra hoisin with the soy into bowls too. The lettuce leaves need a quick wash and adding to a bowl also. 

Construct your lettuce beds by adding a little of everything and make sure you have a napkin or a finger wash bowl handy!
