Jamie Oliver's Brownies - tweaked!

As I said in the previous post, the recipe I had from Jamie Oliver's website was a bit on the 'rich' side or, in better terms, a bit unhealthy for my liking so I tweaked it and the result was absolutely delicious.




You will need a baking tray around 20 x 20 cm, lightly greased and lined with baking paper.

Here is the tweaked version:

200g unsalted butter - cubed
100g good quality dark chocolate (usually means 70% cocoa solids) - broken up
100g cooking milk chocolate - broken up
100g walnuts - chopped into tiny pieces, a few left a bit larger for texture
80g cocoa powder - sifted
30g plain flour - sifted
35g self-raising flour - sifted
300g caster sugar
4 eggs


Oven 180 degrees C / 350 degrees F/ Gas 4

Method

In a heat proof bowl over a pan of simmering water add your chocolate and butter and leave to melt. Stir together once the solids have completely melted, it should have  a lovely sheen when mixed. Add the chopped nuts and mix together.

Mix together in another bowl all of the dry ingredients that are left.

Beat the eggs in another bowl and add to the dry ingredients mixing until you have a silky consistency. Pour into the baking tray and pop into the oven for 25 minutes.

Take out of the oven after 25 minutes, they should be a little springy on top but the inside will be very gooey. Leave to cool for a short while and then lift from the tray and onto a cooling tray or chopping board. I peel away the baking paper at this stage very slowly and carefully otherwise it can stick to the brownies.



When cool cut into squares - Enjoy!
