I bought a pack of salmon from the supermarket and i'm making two meals, dinner tonight and lunch tomorrow. It's a 200g pack with 2 salmon fillets and cost £4.
Last night I had the pizza and salad so i'll chop up more of the lettuce, kiwi and tomatoes and add the salmon in chunks.
Tonight i'm having one of the fillets with a little of the salad and rice and cooking the 2 fillets at the same time.
I've just cooked up the salmon so let me take you through the steps.
Place your fillets onto a large piece of tin foil that has a little olive oil on it. I added a few little tomatoes and covered the salmon with some sweet chilli sauce. I keep a bottle of it in the cupboard and use it for stir frys, dipping veg into when i'm peckish and things like this meal.
Fold your tin foil and fold over the edges to get a good seal on it
Put this onto a baking tray to make it easy to get out of the oven and pop it into a preheated oven at 180*C and cook for 18-20 minutes
When this was done i used 1 straight away with my salad and rice and broke the other one into chunks and will keep this in a container in the fridge.
Tomorrow i'll gather the things I need for my salad, put them into a separate container and when it's lunchtime i'll add the two together and eat. The sweet chilli sauce will help to add some flavour to the sald.

ADVICE - don't prepare your salad the night before and put into a container as you will find it will look pretty limp the next day. Tear leaves of the lettuce in the morning and chop up anything else then too. Much tastier that way.
This method of using a parcel to cook in is a pretty good way of cooking, it's like a one pot meal.
Try adding a base of soft noodles, salmon on the top, pour over some chilli sauce or even soy sauce and a little water and something like pak choi (chinese lettuce) on top.
