This is a great idea if you're expecting a busy week working late at the library, need a ready meal coming in from a club and are starving or just want to plan ahead.
Ragu (or in my language bolognese sauce that turns into 2 other meals with the addition of only a few more ingredients)
I make a standard ragu style sauce.
Day 1 it's spagetti bolognese.
Day 2 it's chilli sin carne (for those not spanish sin is without rather than con which means with) I make this dish cheaper by using quorn mince not mince meat and it tastes just as good.
Day 3 it's tacos
Sauce ingredients and recipe
1 bag of frozen quorn mince (or minced beef, whichever you prefer)
1 red pepper (green, yellow, orange, whatever colour takes your fancy)
1 onion - chopped
1 carrot - diced or sliced
1 courgette - sliced to suit
1 clove garlic - finely chopped
2 veggie stock cubes (if you want to use beef to add further flavour that's ok) to 1/2 pint water
tin of plum tomatoes
1 glug olive oil
1 tsp dried oregano
1 tsp basil
salt & pepper to taste
Method for Spagetti bolognese (day 1)
Fry onions in olive oil gently until soft (if using minced beef fry the mince first then add onions)
Add red pepper, carrot, garlic and courgette and fry for 2-3 minutes and add the oregano and basil
Add quorn mince and fry 2 mins giving it a good stir to stop it from sticking (if it does the stock will release it from the bottom of the pan)
Add the tin of toms and stock and stir well, bring to boil and put lid on pan THEN turn down heat to lowest point and simmer for at least 1 hour plus a half more if you can. For the last 15 minutes take the lid of and turn the heat up to a higher simmer and season with salt and pepper.
If you leave this overnight the taste of the ingredients really come togther and make a richer sauce, much tastier.
Split the sauce into three and save 2 portions in bowls in the fridge or sandwich bags in the freezer until you need them.
Serve with spagetti and garlic bread

Chilli sin Carne (day 2)
Extra ingredients:
1 handful Mushrooms
1teaspoon of dried chilli flakes or a whole (small) red chilli deseeded and chopped finely
1 teaspoon of cumin seeds (optional but very nice),
rice (as much as you need)
splash of vinegar
teaspoon of sugar or a couple of chunks of milk chocolate
small squeeze of tomatoe puree
Mix all bar the mushrooms together in a cup and add to the 2nd portion of sauce then add mushrooms. Heat to boiling then simmer for 1/2 hour. If sauce is too thick add a little water mixed with tom puree until desired consistency.
Serve with rice
Tacos (day 3)
Extra ingredients:
sour cream
tacos shells (can buy in packets in any superstore) OR tortillas (much softer and floppier)
tin of kidney beans
1 teaspoon of paprika
1 teaspoon of coriander (fresh is always good. If you can grow it on your window sill - sorted)
lettuce (optional but nice and fresh addition)
tomato salsa (shop bought or homemade - chopped tomato, glug of white wine vinegar, dash of olive oil and a sprinkle of black pepper)
Drain and rinse the kidney beans and add to the 3rd portion of sauce with a teaspoon of paprika. If you like your tacos hot add some chilli flakes!
Serve with sour cream, tacos shells
This is a great one for after clubbing especially if you have the sauce made and extras already added and the sour cream and a salsa in the fridge. The munchies will be well and truly banished and as your taste buds are craving more taste why not add extra chilli.
Just remember, however, it's not a great idea to sleep on a full stomach as that lack of movement means it's all turning into love handles on your waist - yes lads you do get them too
This sauce can be made without the quorn and used simply as a tomato sauce for spagetti or any pasta. Add cheese over the top, bits of bacon or chorizo to make it tastier, or some red wine and mushrooms for an extra special meal.
